One national invention patent of our Institute is authorized

Recently, "Detection Method of 2-methylimidazole and 4-methylimidazole in Baked Food and Application thereof” by Food Authority of our Institute is granted an invention patent certificate issued by State Intellectual Property Office.

Methylimidazole is a kind of nitrogen heterocyclic ring compounds, wherein 2-methylimidazole and 4-methylimidazole have a strong eclamptogenic effect; during the making process of baked food such as bread, biscuits and cakes, etc., the added caramel pigment and hot processing may introduce 2-methylimidazole and 4-methylimidazole. Specific to the disadvantages such as tedious pretreatment for detection of 2-methylimidazole and 4-methylimidazole and high cost, etc. in the prior art, the invention develops a detection method with simple pretreatment, speediness and accuracy as well as low cost, which has the advantages of low limit of detection, accuracy and high sensitivity.
